House-Baked Focaccia

Every sandwich begins with our focaccia.

We make our focaccia dough in-house using high-protein bread flour, extra virgin olive oil, sea salt, and yeast. The dough is carefully mixed, folded, proofed, and baked fresh to create the signature texture that defines a Zay’z sandwich—light and airy on the inside with a lightly crisp, golden crust. This isn't a product pulled from a freezer or delivered by a distributor. It’s bread made the old-fashioned way, requiring time, patience, and attention to detail. The long fermentation process develops flavor naturally, creating a focaccia that stands on its own while perfectly supporting the ingredients layered inside.

The result is bread with character, structure, and flavor—something increasingly rare in a world of shortcuts.

A True Scratch Kitchen

We believe great food starts with making things ourselves.

Nearly everything that passes through our kitchen is prepared in-house. Our dressings, sauces, spreads, pickles, jams, and specialty toppings are all crafted from scratch using real ingredients and traditional techniques. There are no seed oils of any kind in our products, only extra virgin olive oil and avocado oil. Rather than relying on pre-made products, we choose to put in the extra work because the difference is noticeable. Scratch-made food allows us to control quality, eliminate unnecessary additives, and create flavors that are uniquely our own.

It's a slower approach, but we believe it's the right one.

Gluten-Free Done Right

Guests who need gluten-free options deserve more than an afterthought. We developed our own house-made gluten-free focaccia that reflects the same standards as everything else we make. Our vegan friendly GF slab is baked in-house using premium ingredients, including Caputo Fioreglut gluten-free flour and extra virgin olive oil. The result is a gluten-free bread that's soft, flavorful, and satisfying—without the dry, crumbly texture that often gives gluten-free bread a bad reputation. Because our gluten-free focaccia is made in small batches and handled with the same care as our traditional focaccia, guests can enjoy the full Zay’z experience without feeling like they're settling for a substitute.
